This is an easy dutch oven cobbler made with pumpkin and pecans. As much as I enjoy peach cobbler, people only seem to use pumpkins for pumpkin pie and jack-o-lanterns, so I'm glad to make something a little different with this pumpkin. This was prepared on Halloween morning in only a little more than an hour, from beginning to end – because what better time is there to use a cast iron cauldron than Halloween?

Preheat oven to 350 degrees Fahrenheit. Chop pecans, or crush them into large pieces.

Melt 1 stick (1/2 cup) of butter, and let it cool while the cobbler mix is prepared.

In one bowl, mix together dry ingredients: flour, baking powder, salt, sugar, spices (cinnamon, nutmeg, cloves). Whisk them to ensure the dry ingredients are light and airy rather than dense and packed.

In a second bowl, mix together wet ingredients< pumpkin puree, cream, melted butter, vanilla extract. Add the dry ingredients to the wet ingredients, and mix them all together into a batter. The batter will be very thick! (This is correct.)

In a 4 to 5 quart (#8 size) cast iron dutch oven, spread the batter evenly over the bottom. Use a spatula and spread it out in the same way you would spread the frosting over a cake.

In a third bowl, prepare the cobbler topping by mixing together white sugar, brown sugar, and pecans. Spread the topping over the top of the cobbler batter.

And now the magic happens. For the final ingredient, pour 2 and 1/2 cups of very hot water into the dutch oven, on top of the cobbler mix. DO NOT STIR THE COBBLER! Leave the hot water on top. Place the pot into the oven exactly like this.

Bake the cobbler, uncovered, for 40 minutes at 350 degrees Fahrenheit. The water will settle into the mix and produce a beautiful looking cobbler.

After 40 minutes, take the pot out of the oven. Let it cool for only a few minutes! Serve it HOT, in bowls, topped with ice cream. The liquid from the cobbbler is a hot sauce that can then be poured over the ice cream and the cobbler.
