Cheeseburger Rice

YouTube: Cheeseburger Rice
This one was inspired by a series of TikTok videos entitled, "30 minute meals your kids won't throw on the floor." Because how many kids dislike cheeseburger? This is exactly as the title says, cheeseburger with rice mixed in. It's easy to make, not especially expensive, and delicious.
Pans needed: One large cast iron skillet, with a lid. You can also use a dutch oven or a wok, if you prefer.

Ingredients

  • 1 pound 80% lean ground beef (usually called 80-20 ground beef)
  • Salt, pepper and garlic powder to taste (for the ground beef)
  • 1/2 teaspoon smoked paprika
  • 1/2 cup chopped onions (roughly chopped, not diced)
  • 1 cup long grain rice
  • 8 ounces tomato sauce
  • 1 1/2 cups beef broth
  • 8 ounces shredded cheese
This dish is prepared in two parts. First, heat up a large cast iron pan, preferably 12 inches in diameter, on the stovetop.
When the pan is hot and beginning to smoke, add ground beef and stir it in the pan until the beef is browned and there are no pink bits of beef. Mix in salt, pepper and garlic powder to taste. I also like adding smoked paprika to give the ground beef some extra flavor. You can add any spices you want to flavor the ground beef -- after all, it's ground beef. Flavor it how you like it. Add chopped onions, and stir for a few minutes until the onions are soft. Add rice, then add the liquids, namely tomato sauce and beef broth. Stir it all together, then cover the pan and let it simmer for 15 minutes.
While the rice is cooking, preheat the oven to 400 degrees Fahrenheit.
After 15 minutes, uncover the pan and make sure the rice is soft. If not, cover and let it simmer for another 5 to 10 minutes.
When the rice is soft and cooked, mix in half of the cheddar cheese. Then, sprinkle the rest of the cheese over the top of the dish. Leave the pan uncovered, and place it in the oven. Let the cheese melt and brown in the oven; this will only take about five minutes. Remove the pan from the oven...and serve hot!
