"Dirty rice" is called that because that's what it looks like. The taste, however, is anything but dirty! This is a Cajun style jambalaya dish that's fast, easy, and of course very tasty. It can be cooked entirely in one pot, in about 30 to 40 minutes. Cajun purists would insist that gizzards or liver be included in the ingredients, but that's not really necessary. You could omit the sausage and simply use ground beef for the meat, and you'd have an easy dirty rice your whole family will enjoy.
Pans needed: One large cast iron pan with a cover: a large skillet, dutch oven, wok, or whatever you have available. One metal bowl or container to reserve the cooked meat.

Ingredients

  • 8 ounces ground beef (or ground pork, turkey, or any ground meat)
  • 8 ounces sausage, about 3 sausages (Cajun purists would insist this be andouille or boudin, but any sausage will work.)
  • 8 ounces chicken gizzards, hearts or livers (optional)
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 1/2 green pepper, chopped
  • 4 cloves garlic, chopped
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons Cajun seasoning (Old Bay, Zatarain's, etc.)
  • 2 tablespooks dried parsley
  • 3 cups chicken broth
  • 1 1/2 cups long grain rice, uncooked
To start the preparations, place the cast iron pan in the oven, and heat it as hot as it can get. This will ensure the pan will be blazing hot, and it will give a good stir fry.
Prepare the Cajun holy trinity by chopping up onion, celery, green pepper, garlic. Cut up sausages and other meats into small bite sized pieces, or smaller.
By this time the cast iron pan is good and hot. Turn your stovetop burner to about 2/3 of maximum, take it out of the oven, and place on the hot burner. Add 1 tablespook cooking oil to the pan and wait about 30 seconds for the oil to heat up. Then, it's time to start frying. Add the sausage first and thoroughly cook it. The sausage has to be completely cooked, so cook it by itself at first, to be sure it's well done. Once the sausage is ready, mix in ground beef, and fry it all together. Add in some salt and pepper. When the sausage and beef are ready, we reserve it into a metal bowl.
Use the pan grease to fry up the trinity until the onions are good and soft. Then add the meat back in, and stir it all together. Now you can season it up with worcestershire sauce, and of course cajun seasoning. And it wouldn't be a Cajun dish if we didn't include lots of parsley.
Once it's all mixed together, add three cups of chicken broth to the pan. Then cover it, and bring it to a boil. Uncover and add in a cup and a half of rice. Cover the pan once again, turn the heat down, and let it simmer for twenty minutes.
And now, dinner is served. This is easy, fast, and a good meal for any night of the week, whether it's a work night or a weekend. And like the name says, it's dirty and it sticks to your ribs.
